Easy Vegan Chili

1/8 cup onion
1/3 cup bell pepper
1/4 cup celery
4 cloves garlic
1/3 of large jalapeño
1 tbs of fresh cilantro
2 large tomatoes
3 drops of liquid smoke (optional)
1 15 oz can kidney beans
1 vegetable bouillon
2 tbs olive oil
1 15 oz can roasted diced tomato
1/2 package of 16 oz of meatless ground beef
2 tsp Cumin
2 tsp Paprika
1 tsp Cilantro
1/4 cup of chili powder

In food processor, add tomatoes, cilantro, and jalapeño. Process until a tomatoes are bite size chunky pieces.

Chop up green pepper, onion, and celery. In a pot, put 2 tbs of olive oil and heat on medium-high. Toss in veggies with the bouillon cube. Once bouillon falls apart, transfer to crock pot. Add beans, fire roasted tomato, garlic, and tomato puree to crock pot along with all the seasonings and ground beef.

Turn crock pot to high and cover. After 1 hour, stir and turn the crock pot to low for an additional 30 minutes.

There is nothing like the smell of a pot of chili getting friendly on the stove or in the crock pot. The liquid smoke essence must take it over the top!
