Vegan Parmesan Cheeze

1/4 cup raw almonds
1/4 cup nutritional yeast
1 tbs salt

In food processor, combine all ingredients until  it resembles Parmesan cheese. Add more salt if desired.

For variation: Add onion or garlic powder.

  1. This is so simple but I imagine it would be really tasty. We just sprinkle our pasta with plain nutritional yeast sometimes and that’s really good, but I think I will have to try this sometime too, and put it on a pasta bake.

    Now I’m laughing at that sentence. 😀

    Does it taste the same, or at least close, to dairy cheese? I’m secretly a chicken and I’ve heard bad things about soy cheeses. Maybe I’ve been asking the wrong people.

    • I think this version is remarkably close. It has a cheese flavor because of the nutritional yeast. My favorite vegan cheeses are Tofutti slices and Daiya. You should try it sometime!!
